You are the 5th person I know (including me) with ADHD who also likes growing plants. I am starting to think there is a correlation
Learning bonsai is on my to-do list. I have too many plants to take care of at the moment and don’t have nice looking decorative pots (I tend to think they are expensive and then spend the same money on more plants haha).
However, I did look up bonsai principles and techniques when I needed to shape or prune my perennials (citrus trees, pepper, etc).
Meyer Lemon
When I got this from the nursery it was super lopsided. The stick came with the plant. I tried to rebalance it by inducing growth on the opposite side using strong targeted grow light from the side. Buds had just emerged in this photo.
2 months later it did not need the stick to stand upright anymore.
8 months later it looks like this.

Before Pruning
It is tilted to the right because it is heavier on the right, I am trying to rebalance it over time by encouraging growth on the left side, with more light.
After Pruning
(Right side is a bit too tall still but I don’t want to stress the plant too much, so I saved it for the next pruning)
