I don’t know what my plants are up to lately because they really seem to do weird things such as this: for some reason, a sundew grew out of the flower stalk of a sundew.
The weirdest thing ever?!

It's common in D. prolifera.

will it grow into a new plant if I just let it be?

Plant it now because you cut it of. They should be able to live off the flower stock off for a while but I would plant it now since you cut it off. It should devolve easily into a new plant like a regular leaf cutting.
